European lobster welfare was formally recognised in UK law in 2022, making the UK one of the first countries to acknowledge decapod crustacean sentience in statute. However, legal protection has not yet translated into mandatory welfare standards for slaughter. Electric stunning devices are commercially available and produce rapid unconsciousness before death. The welfare case for mandatory stunning before lobster killing is as strong as for any vertebrate, and growing public awareness is driving restaurant adoption of welfare-positive slaughter methods. Individual housing requirements in aquaculture reflect the species extreme aggression and territorial nature.
