Freshwater crab welfare is largely unaddressed in Chinese aquaculture despite the enormous scale of production. Molting crabs are in a physiologically vulnerable state with soft exoskeletons and impaired osmotic regulation — handling during this period causes disproportionate welfare harm. Live transport in overstocked containers with poor water quality causes prolonged stress and high mortality. The evidence for crustacean nociception has strengthened considerably, making the traditional live boiling of crabs without prior stunning increasingly difficult to defend. Consumer and regulatory pressure in export markets is beginning to drive welfare improvements in this sector.
