Sturgeon aquaculture welfare presents challenges related to the biology of a long-lived, stress-sensitive species. Female sturgeon raised for caviar may be kept for 7-12 years before reaching reproductive maturity, representing a long period of welfare investment before any production return. Traditional caviar production that kills females at harvest is increasingly being replaced by live-stripping techniques that allow multiple harvests, but these procedures are stressful and require skillful handling. Water quality management for sturgeon, which can grow very large, requires substantial infrastructure. The welfare of this ancient fish lineage in captivity receives increasing attention as aquaculture expands and wild populations remain critically threatened.
