Growing scientific evidence for pain sentience in crustaceans is driving legislative change in several countries.
Crustaceans possess nociceptors, show protective behaviour after injury, and show stress hormone responses to noxious stimuli consistent with pain experience. Despite this evidence, live boiling remains a standard commercial and domestic practice in many countries. Welfare-conscious slaughter methods including electrical stunning are available and effective but rarely mandated. Legislative progress remains uneven globally.
