Welfare Considerations

Foie gras production involves systematic infliction of suffering for a luxury product. Force-feeding two to three times daily causes oesophageal injuries, impairs liver function, and the greatly enlarged liver physically restricts movement and breathing. Birds in production show avoidance responses to feeders that demonstrate aversive conditioning. The product has no nutritional or health value that cannot be obtained from other foods, making the welfare cost entirely unjustifiable. The ban on production in many countries has not been accompanied by import bans, allowing consumers to purchase a product that could not be legally produced in their country.
