Crabs, lobsters, crayfish, and shrimp may have significant capacity for suffering. Emerging welfare science is changing how the seafood industry handles these animals.
The scientific evidence that decapod crustaceans experience something analogous to pain has strengthened considerably in recent years. Nociceptors, pain behavior, and physiological stress responses have been demonstrated in crabs, lobsters, and shrimp. Methods of killing that minimize suffering, such as electrical stunning before cooking, are now commercially available but rarely adopted. Factory shrimp farming creates additional welfare concerns through extreme crowding, antibiotic overuse, and rough handling.
