Rainbow trout welfare is strongly determined by water quality and density management. Unlike some farmed fish species, trout are highly oxygen-dependent and immediately show welfare impacts from poor water conditions through reduced feeding and increased aggression. Fin damage — a reliable indicator of chronic stress and aggression — can be scored non-invasively to assess flock welfare. Humane slaughter using percussive stunning or CO2 anaesthesia followed by gill cutting significantly reduces suffering compared to live chilling in ice slurry, which can take 10 minutes or more to cause insensibility. Welfare-conscious trout production is technically achievable and increasingly demanded by retailers.
