Yellowtail are powerful, fast-swimming pelagic predators whose welfare needs differ significantly from bottom-dwelling or slower species. High stocking densities frustrate natural behavior and cause chronic stress measurable through cortisol levels. Handling during grading, transport, and harvest causes acute stress. Recirculating aquaculture systems offer better water quality control but require careful management of stocking density. As global demand for premium sushi-grade fish grows, welfare standards for yellowtail farming need urgent development based on the species-specific needs of these active, intelligent fish.
