The development of ethical alternatives using breeds that naturally accumulate liver fat without force-feeding, or through voluntary overeating management, represents a meaningful welfare improvement. Consumer-driven market pressure and retailer decisions to remove traditional foie gras from sale have significantly reduced demand in many markets ahead of legislative change.
