Crustaceans like crabs and lobsters are routinely boiled alive, yet accumulating evidence suggests they are sentient and capable of experiencing pain. Science is changing how we should treat them.
The welfare case for crustaceans has transformed over the past decade. Where once the default assumption was that invertebrates lacked the neural architecture for suffering, the evidence now indicates that decapod crustaceans have sufficiently complex nervous systems and behavioural responses to warrant precautionary welfare consideration. Boiling a lobster alive — a practice that would be clearly unacceptable if applied to a vertebrate with similar responses to pain — is now scientifically controversial and legally regulated in a growing number of jurisdictions. The transition to humane killing methods is technically straightforward: electric stunning devices designed for crustaceans (such as the CrustaStun) render animals unconscious before killing; rapid percussive methods or spiking destroy the nervous system quickly. The welfare opportunity here is large: billions of crustaceans are killed annually in food production, and improving killing methods represents a tractable, scalable welfare improvement. The UK has led on regulatory recognition; global standards have much further to go.
