Sturgeon are among the oldest fish families on Earth and the source of caviar. With wild populations near collapse, farmed caviar is increasingly common — raising welfare questions about long grow-out periods and slaughter of a long-lived, cognitively complex species.
Farmed sturgeon welfare presents unique challenges arising from the species' extraordinary longevity and the long production timelines caviar requires. Individual fish may be held in farm conditions for a decade or more before their first harvest — meaning that any ongoing welfare deficit (chronic crowding, poor water quality, inadequate enrichment) accumulates across years rather than weeks. The traditional kill-and-extract method eliminates this long-term concern but ends a fish's life after a decade of farming. Strip harvesting, which surgically extracts eggs while the fish survives, allows repeated production but involves regular handling stress and surgical intervention. Sturgeon's sensitivity to handling stress means that every veterinary procedure, grading event, or harvest carries welfare cost. As sentient fish with complex physiological responses to aversive stimuli, farmed sturgeon deserve welfare consideration proportionate to their production timeline and cognitive complexity.
