Sturgeon aquaculture welfare is characterized by the tension between extremely long production timelines and the welfare costs of intensive farming conditions over those periods. A female sturgeon kept in suboptimal conditions for a decade before producing caviar accumulates welfare costs that dwarf those of shorter-cycle species. Sturgeon are bottom-dwelling fish that require clean, cold, well-oxygenated water with appropriate substrate and hiding opportunities. High stocking densities cause chronic stress and injury from benthic crowding. The traditional method of killing females to extract eggs is being replaced by ultrasound-guided massage or surgical techniques that allow repeated harvesting — a significant welfare improvement. However, the surgery itself carries risks. Long-distance transport of juvenile sturgeon for stocking is a welfare concern given their stress sensitivity. Welfare assessment frameworks for long-lived farmed species that account for cumulative lifetime stress are needed.
