The gap between what science tells us about trout sentience and what occurs in commercial harvest is one of the starkest welfare failures in food production. Millions of trout are killed annually by methods that cause minutes of severe physiological distress before death: suffocation in air causes progressive hypoxic distress; ice slurry slows metabolism but does not prevent suffering; neither method renders fish insensible before the dying process begins.
