The welfare status of decapod crustaceans represents the current frontier of animal welfare concern. The evidence for their sentience — aversive learning, pain behavior, motivational trade-offs — does not match the certainty we have for vertebrates, but is sufficient to justify serious moral consideration. The scale of the market is enormous: billions of crabs, lobsters, and shrimp are killed annually. The most welfare-improving change would be replacing live boiling with effective stunning before killing, a change that is technically feasible and commercially available. The regulatory and behavioral change lag behind the science.
