Live lobster transport represents a significant welfare challenge given the duration of emersion, temperature stress, and social crowding involved. Chilling reduces movement and stress responses but does not render animals insensible — neurological responses to noxious stimuli persist at commercial transport temperatures. Anesthetic sedation before transport is a promising welfare improvement: substances like eugenol (clove oil) produce rapid sedation and allow recovery, significantly reducing physiological stress markers compared to chilled-only transport. Water immersion systems that maintain lobsters in oxygenated seawater throughout transport eliminate emersion stress. Industry uptake of these improvements is slow due to cost, but regulatory frameworks in Switzerland and the UK are driving change.
