Lobster welfare has become a serious scientific and ethical matter following research by Robert Elwood, Barry Magee, and others demonstrating pain-like responses in decapod crustaceans. When lobsters are plunged into boiling water, they show thrashing movements for several minutes before dying — behavior consistent with acute pain experience. Electrical stunning causing immediate loss of consciousness is a readily available alternative that dramatically reduces potential suffering. The UK Animal Welfare (Sentience) Act 2022 extended protections to decapod crustaceans following a systematic review. Progressive legislation in multiple countries now requires humane killing before cooking. This welfare improvement is achievable with simple equipment and negligible cost, making it one of the most readily actionable improvements in seafood welfare.
