Poultry slaughter welfare represents one of the highest-volume welfare decisions in food production. The scale — 70 billion birds annually — means that even small improvements in stunning effectiveness and pre-slaughter handling have enormous aggregate welfare impacts. Water bath stunning has well-documented limitations: shackling conscious birds by their legs causes pain, inversion causes distress, and parameter variability means a proportion of birds are inadequately stunned. Controlled atmosphere systems avoid these problems by rendering birds unconscious before handling, but involve capital investment that many processors are unwilling to make without regulatory pressure or consumer demand.
