Live boiling — the most common slaughter method — causes tissue damage through progressive heating that may involve prolonged nociceptive responses before death. Electrical stunning before processing is technically feasible and represents better welfare practice. The scale of Chinese crayfish production means that even modest improvements in welfare standards would affect billions of animals.
