For centuries, the complex nervous systems and behavioral responses of crustaceans and cephalopods were dismissed as reflexes without subjective experience. Accumulating evidence of nociception, protective behavior, and in some cases apparent suffering-related responses has shifted scientific and legal consensus. The UK extension of sentience recognition to decapods and cephalopods in 2022 reflects this scientific evolution. The welfare implications — particularly for practices like live boiling of lobsters and crabs — are significant and commercially challenging but not insuperable.
