Deer farming for venison and velvet antler produces products with niche markets, but the welfare of farmed deer is challenged by their nature as prey animals with strong flight responses that conflict with intensive handling.
Deer are prey animals whose evolutionary fear responses make conventional livestock handling extremely stressful. Veterinary procedures, drafting, and transport all carry risk of capture myopathy, where extreme fear-related physiological stress can cause muscle damage and death in previously healthy animals. Velvet antler harvest, even with local anesthesia, causes acute pain during and after the procedure as the developing antler contains extensive nerve tissue. The extensive paddock systems used in deer farming in New Zealand represent better welfare than intensive systems but still require handling that these animals find highly stressful. Low-stress handling design — races, covered handling facilities, and calm techniques — can substantially reduce the welfare cost of necessary management interventions.
