Crayfish welfare sits at the intersection of emerging sentience science and traditional culinary practice that has never previously been questioned. The evidence base for crayfish nociception is substantial enough to have convinced the Birch review panel that informed the London Declaration, representing a scientific consensus that crayfish can suffer. Live boiling, the standard preparation method, exposes conscious animals to extreme thermal pain during the several minutes before death. The welfare improvement is straightforward: electrical stunning or rapid mechanical destruction of the nervous system (pithing) before cooking eliminates conscious suffering. These methods are already commercially available and are used in some premium seafood preparation contexts. The farming welfare considerations are less acute than slaughter since pond-based crayfish production allows more behavioral freedom than intensive fish farming, but crowding, water quality management, and capture methods all affect individual welfare.
