The emerging welfare science for decapod crustaceans and cephalopods, including evidence of pain experience, regulatory changes, and implications for the seafood industry.
Aquatic invertebrate welfare represents one of the fastest-evolving areas of animal welfare science and law. For decades, crustaceans and cephalopods were excluded from welfare protections on the assumption that their nervous systems were too simple for pain experience. This assumption has been substantially revised: behavioral research demonstrates avoidance learning, wound-directed behavior, and physiological stress responses in lobsters and crabs that parallel vertebrate pain responses. The Birch review (2021), commissioned by the UK government, concluded the evidence was sufficient to extend welfare protections to decapods and cephalopods. Industry practices lag far behind this science: live boiling remains standard despite causing prolonged thermal nociception, and transport and storage conditions are rarely assessed from a welfare perspective. Transitioning the commercial shellfish industry toward humane killing methods (electrical stunning, chilling then spiking) is achievable with modest infrastructure investment and represents a significant welfare improvement at relatively low cost per animal.
