Yellowtail aquaculture welfare presents challenges rooted in the biology of active marine predators. These fish evolved to swim constantly in oxygen-rich currents, cover large distances, and hunt actively — behavioral repertoires that intensive net pen culture severely restricts. Research on welfare indicators in yellowtail is less developed than for salmon, but the same principles apply: overcrowding, poor water quality, rough handling, and inhumane slaughter all cause measurable welfare harm. The ikejime technique, traditional in Japanese fish preparation, involves precise brain spiking following percussive stunning — an approach that is both more humane and produces superior flesh quality by preventing the cortisol surge of slow death. Promoting this technique globally represents a welfare improvement achievable without significant cost to producers.
