Poultry Stunning Methods: Welfare Comparison and Standards

Pre-slaughter stunning of poultry is mandated in many jurisdictions, but the welfare quality varies enormously between different stunning methods in commercial use.

Key Facts

Welfare Considerations

Poultry slaughter welfare is one of the highest-impact areas for welfare improvement given the scale: approximately 70 billion chickens are slaughtered annually worldwide. The water bath system imposes shackling pain, causes wing injuries, and frequently delivers inadequate stunning currents. Low-atmosphere pressure stunning and high-concentration inert gas CAS (argon or nitrogen) represent the most welfare-positive available technologies, avoiding both shackling stress and the aversion of CO2. Consumer pressure on retailers and food service companies to specify stunning method standards, and regulatory pressure for technology mandates, are the primary levers for improvement at this scale.
