Ethical alternatives to traditional force-fed foie gras production are emerging, including natural fatty liver production from birds that self-select high-calorie diets without force-feeding.
Natural fatty liver production through self-selected hyperphagia represents a genuinely welfare-positive alternative that meets the birds' evolved behavioural drive to gorge before migration rather than imposing artificial force-feeding. Birds in natural production systems show normal behaviour throughout, choosing to increase food intake in response to seasonal cues rather than being physically forced. The welfare outcome is fundamentally different from force-fed production. The challenge is regulatory: existing PDO protections exclude welfare-friendly alternatives from the lucrative "foie gras" designation, creating a market disadvantage. Reforming these designations to allow welfare-positive alternatives to compete equally would accelerate transition away from force-fed production.
