Sea urchins are commercially harvested in many parts of the world for their roe. Welfare during harvesting and processing raises questions about urchin sentience and appropriate handling methods.
The welfare status of sea urchins during harvesting is uncertain given limited research on echinoderm sentience. Applying a precautionary approach, minimising handling time, reducing physical trauma during harvesting, and developing rapid dispatch methods before processing represents responsible welfare practice under scientific uncertainty.
