Farmed Sturgeon Welfare: Key Considerations

Sturgeon aquaculture is a growing industry producing caviar and meat. Sturgeon have complex welfare needs requiring specialist husbandry to prevent suffering.

Sturgeon Biology and Welfare Needs

Sturgeon are ancient fish (Acipenseridae family) with unique anatomy including a cartilaginous skeleton and bony scutes. They are long-lived, slow to mature, and highly sensitive to water quality. In the wild they undertake long migrations. In captivity, their space, environmental, and social needs must be carefully met. They are sentient beings capable of experiencing stress and pain.

Water Quality Requirements

Sturgeon require cool, well-oxygenated, low-turbidity water. Temperature is critical: most farmed species (Siberian, Beluga, Russian sturgeon) prefer 15-22°C. High stocking densities increase ammonia and deplete oxygen. Regular water quality monitoring is essential. Poor water quality causes chronic stress, immunosuppression, and disease susceptibility.

Stocking Density and Space

Overstocking causes aggression, injury (scutes can inflict wounds), competition for food, and chronic stress. Recommended stocking densities vary by species and size but generally lower densities improve welfare and growth. Adequate tank depth is important: sturgeon are bottom-dwellers and need space to move horizontally and turn freely.

Feeding and Nutrition

Sturgeon are primarily carnivorous. Commercial diets must meet their nutritional requirements for each growth stage. Overfeeding degrades water quality; underfeeding causes competition and poor welfare. Automated feeders can improve consistency. Careful monitoring of feeding behaviour is a useful welfare indicator.

Slaughter and Caviar Harvesting

Traditional caviar harvesting kills the fish. More welfare-friendly methods of caviar 'stripping' (extracting eggs without killing the fish) are now available. Slaughter should follow best practice: effective stunning before bleeding. Electrical or percussive stunning are preferred over CO2 or simple live chilling, which may not prevent pain perception.
